SALMON PATTIES 
1 can pink salmon
1 1/2 c. left over mashed potatoes
1 med. onion, chopped fine
1 egg
About 1/4 tsp. pepper or to taste

Drain salmon and reserve the liquid. Break up the salmon into a bowl. Add the chopped onion, mashed potatoes and egg. Mix thoroughly with your hands. If too stiff, gradually add enough of the salmon liquid until it is easy to work with. Shape into patties and fry in oil until nicely browned. If you have no mashed potatoes, you may substitute 1 cup bread crumbs or cracker meal.
