BEST OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt (opt.)
1 tsp. cinnamon (opt.)
1/4 tsp. nutmeg (opt.)
3 c. oats (quick or old-fashioned, uncooked)
1 c. raisins
1/2 c. chopped nuts

Heat oven to 375 degrees. Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire rack. Store tightly covered. Makes 4 1/2 dozen.
