YELLOW SQUASH RELISH 
12 c. ground squash
4 c. ground onions
2 red sweet peppers
2 green sweet peppers
5 tbsp. salt
2 1/2 c. vinegar
2 tbsp. pickle spice
1 tbsp. celery seed
1 tbsp. turmeric
6 c. sugar

Stir first 4 ingredients well. Add salt; let set overnight. Next morning, drain and wash this mixture well. Then boil: vinegar, pickle spice, celery seed, turmeric. Strain these. Add hot mixture to sugar. Stir until sugar is dissolved. Pour spice mix and sugar over squash. Mix good and boil very hard for 3 minutes. Put into jars and seal.
