RICE AND VEGGIE STIR-FRY 
1/4 c. peanut oil
1/2 c. onion, chopped
1/2 c. celery, chopped
1 c. cooked ham, diced
1 clove garlic, minced
3 c. cooked rice, cooked
1 c. frozen peas
1 c. bean sprouts
3 eggs, slightly beaten
3 tbsp. soy sauce

Heat oil in wok over high heat. Add onion, celery, ham and garlic. Stir-fry about 2 minutes. Clear space in middle of wok; add rice, peas and bean sprouts; stir-fry for about 3 minutes.

Clear another space in middle of wok; add eggs, cook for 1 minute, stirring frequently. Stir all ingredients together. Clear space in center. Add soy sauce, stir until well blended, about 1 minute. Serve. Serves 6.
