RICE VEGGIE MEDLEY 
1 pkg. Uncle Ben long grain and wild rice
2 c. sliced zucchini
1 can julienne carrots, drained
1/2 (10 oz.) pkg. frozen green peas
1 lb. Co Jack cheese, grated
Slivered almonds

Cook rice as directed on package. Cook zucchini in microwave for 3 to 5 minutes. Microwave peas for 1 minute. Combine first 4 ingredients. Place in greased (or use Pam) 8 x 8 inch pan. Top with grated cheese and slivered almonds. Bake at 350 degrees for 25 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
