TURKEY SAUSAGE VEGGIE RICE 
1/2 lb. turkey sausage
1 lg. carrot, sliced 1/4 inch thick
1 lg. onion, diced
2 (8 inch) zucchini, sliced 3/4 inch thick
1 (15 oz.) can stewed tomatoes
1 (4 oz.) can mushrooms
Mrs. Dash

Using a 12-inch skillet, saute turkey sausage in chunks. Add carrots, cook until almost done. Add diced onion, then add zucchini. Cook until zucchini is almost done. Add stewed tomatoes and mushrooms, undrained. Season with Mrs. Dash. Simmer until juice is almost gone. Serve over rice.
