STUFFED APPLES 
5 Granny Smith apples
1 lg. can cooked sweet potatoes
3 tbsp. butter (melted)
3 tbsp. maple syrup
1/8 tsp. cinnamon
1/2 c. chopped walnuts or shredded coconut

TOPPING:

3 tbsp. butter (melted)
1/3 c. maple syrup
1/8 tsp. cinnamon

Core apple and cut off 1/2 inch of top. Hollow out a little more apple - mash sweet potatoes and add butter, maple syrup and cinnamon. Fill center of apples with mixture. Top with walnuts or coconut. Pour topping over all apples. Bake at 350 for 1 hour.
