VEAL AND HAM PATTIES WITH
APRICOTS
 
1/4 lb. ground raw veal
1/4 lb. ground raw smoked ham
1 tbsp. chopped onion
1 tbsp. chopped parsley
Pinch of sage
1/4 c. dry bread crumbs
Hot water
4 canned apricot halves, drained

Mix the meat thoroughly with the seasonings and crumbs; add water to form a mixture which can be shaped into 4 squares.

Preheat the broiler 10 minutes. Arrange meat on the broiler rack. Brush with oil or butter. Place rack so that top of meat is 3 inches below bottom of flame or electric unit. Broil until brown, about 5 minutes. Turn and place the apricots on top of the meat and continue broiling for 5 minutes.
