HAM - PEACH PATTY 
6 peach slices plus 2 tbsp. juice from a can of peaches
1 egg
2 tbsp. soft bread crumbs
2 tbsp. sliced green onion
2 tbsp. chopped green pepper
2 tsp. dijon mustard
6 3/4 oz. can chunk ham, flaked
2 tbsp. snipped parsley

Mix the egg and next 4 ingredients and 2 tablespoons juice. Add ham. Pat into baking dish. Press the peach slices into the ham patties. Bake at 350 degrees for 20 to 25 minutes. Sprinkle with parsley. 2 servings.
