CUTLETS WITH SPINACH DRESSING 
1 pkg. frozen chopped spinach (10 oz.)
6 oz. Ricotta cheese
4 oz. Parmesan cheese
1 clove grated garlic
1 pinch oregano (optional)
Salt and pepper to taste
1 (8 oz.) pkg. Mozzarella
1/4 lb. sliced ham
1 to 1 1/2 lb. chicken cutlets
butter (or vegetable oil) bread crumbs and eggs

When spinach is thawed, blend first 6 items into a creamy sauce. Next saute your breaded cutlets until lightly brown on both sides. Arrange cutlets in baking dish and atop each piece place a slice of ham, a dollop of spinach sauce and crown with a slice of Mozzarella.

Bake at 350 degrees for about 20 minutes.
