QUICK AND EASY YEAST ROLLS 
1 pkg. dry yeast
3/4 c. warm water
2 tbsp. sugar
2 tbsp. oil
1/2 tsp. salt
1 egg, beaten
2 1/2 to 2 3/4 c. flour
Soft butter

Dissolve yeast in warm water in bowl. Add sugar, oil, salt and egg. Stir to mix. Stir in 1 cup of the flour until smooth. Cover with cloth and let rise 15 minutes. Grease square pan (9 x 9). Stir down batter and add 1 1/2 to 1 3/4 cup flour (I use 1 1/2 cup).

Stir until mixed and turn out on lightly floured board. Knead 3 minutes. If sticky add a little more flour. Divide into 16 pieces and shape in balls. Arrange in pan. Let rise until double in size. Bake at 425 degrees for 12 to 15 minutes. Brush top with melted butter. Remove from pan.

Have tried a ridiculous number of yeast roll recipes and this one actually makes good rolls. This is the best recipe on the internet in my opinion for quick yeast rolls that are not gooey, dry, flat, or hard. These came out great. Thanks!

The rolls were light and tender. I definitely recommend this recipe, but had to take off a star because a critical part of the instruction is missing, which is that the shaped rolls need to rise for another 30 - 45 minutes before baking. Other notes: my batter did not rise at all during the first rest, and I needed a bit more than 3 cups of flour to get the right consistency. Maybe that is because I used an extra-large egg.
