GRIDDLE SCONES | |
2 c. flour 1 tsp. baking soda 1/2 tsp. cream of tartar 1/2-1 tsp. sugar 1/4 tsp. salt 1/2 stick butter 1 1/4 c. buttermilk 1 lg. egg, slightly beaten Combine flour, baking soda, cream of tartar, sugar and salt in large bowl. Cut in butter until mixture resembles coarse crumbs. Add buttermilk, and egg to dry ingredients. Mix lightly with fork until mixture forms a soft dough. Heat griddle on medium heat. Grease lightly. Drop dough by heaping tablespoonfuls to make 3 or 4 scones. With back of spoon, spread dough into a flattened 3" round. Cook scones until golden brown on one side. Turn and cook until golden brown on remaining side and center seems firm when gently pressed. Serve with butter and jam. 8 to 10 scones. |
