FRESH APPLE CAKE 
2 c. flour
4 tsp. baking powder
4 c. diced apples (not thin)
1 c. chopped nuts
1 tsp. baking soda
2 tsp. cinnamon
2 well-beaten eggs
2 tsp. vanilla
2 c. sugar
1/2 c. oil
1 tsp. salt

Mix apples and sugar well, add oil, nuts and eggs. Add vanilla and dry ingredients.

Bake in a 9x13-inch pan for 1 hour at 350°F. Serve with whipped cream.
