RED VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
2 tbsp. cocoa
1 c. buttermilk
1 tsp. vinegar

Cream shortening and sugar until light and fluffy. Add eggs, beating after each one. Add coloring. Stir in salt, soda and cocoa to dry ingredients. Add flour alternately with milk and vinegar, beginning and ending with dry ingredients. Pour into three 8 inch greased and floured cake pans. Bake 30 minutes or until tests done at 350 degrees.

ICING:

1 c. milk
1/4 c. flour
1/2 c. butter
1/2 c. butter
1 c. sugar
1 tsp. vanilla

Combine milk and flour. Cook over low heat stirring constantly until thickened. Cream together butter, butter and sugar. Add to paste mixture, beating until light and fluffy. Add vanilla. Enough for tops and sides of three 8 inch layers.
