BARBECUE SAUCE 
1 c. diced onion
2 tbsp. Crisco or lard
1 c. chopped tomatoes, drained
1/2 c. diced green pepper
1 c. diced celery
1 c. catsup
2 tbsp. brown sugar
1/2 tsp. dry mustard
1 tsp. salt
1/2 tsp. cayenne pepper

Sauté onion in hot oil until browned. Add remaining ingredients in order given. Cook slowly over medium heat for 1 hour, or until liquid is reduced by half.

Makes 2 c. sauce.
