OATMEAL MUFFINS 
1 egg
1 c. buttermilk
1/2 c. brown sugar, packed
1/3 c. shortening
1 c. quick cooking oats
1 c. all purpose flour
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda

Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups. Beat egg; stir in buttermilk, brown sugar and shortening. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy. Fill muffin cups full. Bake 20 to 25 minutes or until light brown. Remove immediately from the muffin pan. Makes 12 muffins.

If using self rising flour, omit baking powder and salt.
