OATMEAL RASPBERRY MUFFINS | |
1 egg 1/4 c. oil 1/4 c. brown sugar 1 c. buttermilk* 1 c. oatmeal (not instant) 1/2 c. whole wheat flour 1/2 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 c. raspberries or blueberries (fresh or frozen) *To make buttermilk, pour 1 tablespoon vinegar into measuring cup. Fill remainder with regular milk. Mix first 4 ingredients. Add oatmeal. Stir baking powder, soda and salt into flours, and stir into other ingredients. Add raspberries. Spoon into muffin tins coated with cooking spray. Bake at 400°F for 20-25 minutes. Let cool 1-2 minutes before removing from pan. Makes 1 dozen. |
