WALDEN WOODS FRENCH BREAKFAST
MUFFINS
 
1 1/2 c. plus 2 tbsp. flour
3/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/2 c. milk
1 egg, beaten with 1/3 cup melted butter

COATING:

1/3 c. melted butter
1/2 c. sugar
1 tsp. ground cinnamon
1/2 tsp. vanilla

Combine the first 5 ingredients. Add milk and egg-butter mixture; mix. Grease and flour muffin tins, or use non-stick pans. Fill muffin tins half full. Bake in 400-degree oven for 15 minutes; check for doneness with a toothpick. Remove muffins from pan and dip in melted butter, coating thoroughly. Roll in a mixture of sugar, cinnamon and vanilla; set on rack. Serve warm or reheated. They freeze well. Makes 10 muffins.
