APPLE-BRAN BREAKFAST MUFFINS 
1 1/2 c. shreds of wheat bran cereal
1 c. skim milk
1/4 c. Promise, melted
2 tbsp. molasses
1 lg. cooking apple, coarsely grated (about 1 1/2 c.)
1/2 c. whole wheat flour
1/2 c. all-purpose flour
2 tbsp. toasted wheat germ
2 tsp. baking powder
1/2 tsp. baking soda
2 lg. egg whites, stiffly beaten

Lightly grease twelve 3 x 1 1/4 inch muffin cups. In a medium bowl combine bran and milk, let stand three minutes. Stir in Promise, molasses and apple. Combine flours, wheat germ, baking powder, and baking soda. Stir into bran mixture. Fold in egg whites; turn into prepared muffin cups. Bake in a preheated 350 degree oven 20 to 25 minutes or until done. Yield: 12 muffins.

Per serving 123 calories, 4 gm. fat; 282 mg. sodium and 3 mg. cholesterol per muffin.
