HOPPIN' JOHN 
2 cans black eye peas
1 c. chopped ham
1 c. finely chopped onion
1/2 tsp. hot sauce
2 tbsp. oil
1/2 tsp. salt
3 c. cooked rice

Saute ham, onions and hot sauce in oil over medium heat for 3 to 5 minutes until onions are soft but not yet brown. Mix peas, rice and then heat and serve.
