CORN BAKE 
1/2 c. butter
1 sm. onion, chopped
1/2 green pepper, chopped (optional)
1 can corn, do not drain
1 can creamed corn
1 box Jiffy corn muffin mix
3 eggs
1/2 pt. sour cream
1 c. grated cheddar

Saute onion and green pepper in butter. Combine with corn, corn muffin mix and eggs. Pour in shallow greased casserole. Top with dollops of sour cream and the grated cheddar. Bake, covered, at 350 degrees for 45 to 60 minutes. Serves 8 to 10.
