PUMPKIN BREAD 
1 1/2 c. pumpkin (1 regular size can)
3 eggs
3/4 c. oil
1/2 c. water
2 1/2 c. self-rising flour
1/2 tbsp. cinnamon
2 c. sugar
3/4 c. chopped walnuts (optional)

Stir pumpkin, eggs, oil, and water well. Then add flour, cinnamon, sugar and walnuts, if desired. Bake for 1 hour at 350 degrees.

This can be put into a 1 pound coffee can and baked. Grease inside of can well, pour half full. Bake until done. To remove, cut off the other end of can and shake out.
