CARROT CAKE 
2 c. sugar
1 1/2 c. Mazola oil
4 eggs
2 c. Wondra flour
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
Dash allspice and nutmeg
1/2 c. chopped or shredded pecans (or walnuts)
3 c. grated or shredded carrots (2 lb. bag of carrots)

Beat eggs well. Add sugar and oil. Mix in spices and soda. Add flour in four parts. Fold in carrots and pecans. Bake in greased tube pan at 350 degrees for 50-60 minutes.
