PEACH CRUNCH 
1 c. sifted flour
3/4 c. oatmeal
1 c. brown sugar
1/2 c. melted butter
1 tsp. cinnamon

Press half of crumbs in greased 9-inch baking dish. Cover with 4 cups sliced or diced peaches.

1 c. water
2 tbsp. cornstarch
1 tsp. vanilla

Cook until thick and clear (very fast). Pour over peaches. Top with remaining crumbs. Bake at 350 degrees for 1 hour. Cut in squares and serve warm, plain or with ice cream or whipped cream. (Also good with apples or rhubarb.)
