ZUCCHINISAUCE CAKE 
3 c. cubed zucchini
1/2 c. undiluted frozen apple juice
1/2 c. soft butter
1 1/2 c. sugar
1 egg
2 1/2 c. unsifted flour
1 1/2 tsp. baking soda
1 tsp. salt
1/2 tsp. each cloves, allspice
1/4 tsp. cinnamon
1/2 c. thawed apple juice
1/2 c. nuts, chopped

Simmer zucchini in apple juice (1/2 cup) until tender. Puree in blender. Cream sugar, butter and egg until fluffy. Add blended zucchini, mix well. Add dry ingredients with thawed apple juice. Stir well. Stir in nuts. Bake in a greased and floured 9 x 13 inch pan at 350 degrees for about 40 minutes. Frost as desired.
