ECONOMY STEAK 
2 lbs. beef from skin, 1 inch thick
2 diced onions
2 sliced carrots
1 diced turnip
1 tsp. salt
1/4 tsp. pepper
1 tbsp. flour

Wipe meat with cold, damp cloth. Put in pan. Cover with boiling water. Simmer at low heat 3 hours. Add onion, carrot, turnip, salt, and pepper. Increase heat slightly and simmer another hour. Remove meat and vegetables; put on platter. Thicken liquid with flour mixed to a smooth paste with cold water, stirring and cooking to desired consistency. Serves 6.
