CREAM CHEESE BLINTZES 
1 loaf thinly sliced day old bread
1 (8 oz.) pkg. cream cheese, softened
1 egg yolk
2 tsp. vanilla
1 stick butter, softened
1/4 c. sugar
1 tsp. ground cinnamon mixed with 1/2 cup sugar

Trim crusts from bread. Roll slices lightly with rolling pin. Combined cheese, egg yolk, vanilla, butter, and sugar to make filling. Spread on bread. Cut into thirds and roll up. Dip into melted butter, then in cinnamon-sugar mixture. Freeze on cookie sheet. Then wrap air-tight. Then when ready to use. Bake 15 minutes at 350 degrees. Serve warm. Makes 5 dozen.
