PINEAPPLE-CUCUMBER SALAD | |
1 (8 1/4 oz.) can chunk pineapple 1 (3 oz.) pkg. lime Jello Dash of salt 1 c. boiling water 2 tbsp. vinegar 2 tbsp. chopped pimento 1 c. diced cucumber Drain pineapple, reserve syrup. Add water to syrup to make 3/4 cup. Dissolve gelatin and salt in boiling water. Add measured liquid and vinegar and chill until slightly thickened. Fold in pineapple, cucumber, and pimento. Pour into 4 cup mold, if desired. Chill until firm. Makes 6 servings. |
