UPSIDE DOWN ORANGE BISCUITS | |
1/4 c. butter 1/2 c. orange juice 1/2 c. sugar 2 tsp. grated orange peel 2 c. flour 1/2 tsp. salt 3 tsp. baking powder 3 to 4 tbsp. shortening 3/4 c. milk Combine butter, orange juice, sugar and orange peel; cook 2 minutes. Pour into 9 greased muffin cups. Sift flour, salt and baking powder; cut in shortening. Add milk; stir until dough follows fork around the bowl. Knead 1/4 minute; roll 1/4 inch thick. Brush with butter; sprinkle with 1/4 cup sugar and 1/2 teaspoon cinnamon. Roll as for a jelly roll. Cut 1 inch thick, place cut side down in the muffin cup on top of the orange mixture. Bake in hot oven (450 degrees) for 20 to 25 minutes. |
