MICROWAVE SPICY PEPPER STEAK 
1 1/2 lb. beef chuck or round steak, fat trimmed

MARINADE:

1/3 c. soy sauce
1 clove garlic, minced or pressed
1 tsp. paprika
1/2 tsp. ground ginger
1/3 c. salad oil, divided
1 1/2 c. sliced red, green and/or yellow pepper
1 c. finely sliced celery
1 c. sliced green onion
1 tbsp. cornstarch
3/4 c. water
Salt and pepper to taste
1 c. diced fresh tomatoes

Cut beef across grain into strips. Mix marinade and combine well. Pour marinade over beef strips in a bowl. Marinate at room temperature for at least 30 minutes. Add remaining oil to a micro-safe browning dish or other micro-safe dish. Preheat oil at HIGH power for about 1 minute. Strain beef and reserve marinade. Add beef strips to oil. Microwave, uncovered, at HIGH power for about 3 minutes. Add 1/4 cup water, bell peppers, and celery. Stir to blend.

Microwave, covered, at MEDIUM power for 6 minutes. Remove from oven. Stir well. Microwave at MEDIUM power for another 4-5 minutes. Add onions. Stir well. Mix cornstarch and 1/2 cup water. Add to beef mixture, stirring to coat beef and vegetables. Microwave uncovered at HIGH power for about 3 minutes, stirring once during cooking time. Add tomatoes. Microwave for another minute at HIGH power until dish is heated through. Add salt and pepper to taste. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
