CHEDDAR CHEESE DROP BISCUITS 
1/4 lb. Cheddar cheese, shredded
4 tbsp. unsalted butter, well chilled
2 c. all purpose flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk

Preheat oven to 450. Cut butter into 1 tablespoon pieces. Set aside.

Combine flour, baking powder, soda and salt. Stirring with fork to blend. Cut in butter until mixture resembles coarse meal. Stir in buttermilk and all but 1/4 cup Cheddar cheese. Drop batter by heaping tablespoons 2 inches apart on ungreased baking sheet. Making 10-12 biscuits. Sprinkle each biscuit with remaining cheese.

Bake 8-10 minutes or until puffed and golden.
