STRAWBERRY AND CHICKEN SALAD 
1/2 c. red wine vinegar
1/2 c. honey
2 tbsp. soy sauce
1 tsp. minced garlic
1 tsp. grated fresh ginger

SALAD:

2 c. fresh spinach
5 oz. chicken breast (cut into strips)
1 oz. butter
8 strawberries, cut in half
3 tbsp. chopped pistachio nuts

Mix all dressing ingredients together with wire whip; set aside.

Saute chicken in 1 ounce of butter and brown. Add 3 ounces of dressing and simmer for 1 minute. Add strawberries and simmer 10 seconds. Pour mixture over the fresh spinach and sprinkle with pistachio nuts.
