SAN JOAQUIN CHICKEN SALAD 
2 c. chopped cooked chicken
2 c. pineapple chunks or sliced peaches (canned)
1 1/2 c. strawberry halves
1 c. green grapes (seedless)
1 c. chopped celery
1/2 c. salad dressing
3/4 tsp. salt, or to taste
1/4 tsp. ground ginger
1/8 tsp. pepper
1/4 c. walnuts (optional)

Combine chicken, pineapple (or peaches), strawberries, grapes, celery (optional), salad dressing and seasonings and walnuts if desired.

Can serve on lettuce lined platter. Garnish with toasted walnuts and additional strawberries. Makes 4-6 servings.
