SUMMERTIME CHICKEN SALAD 
2 c. cooked chicken, cubed
1/2 c. celery
1 tbsp. sliced green onion & tops
1/2 c. salad oil
1/4 c. white wine vinegar
2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. lemon peel, grated
2 c. cantaloupe, cubed
1 c. seedless grapes, green or red
1 med. apple, diced
1/2 c. chopped walnuts
1 kiwi

Mix chicken, celery and green onion together in a large bowl. Combine salad oil, vinegar, sugar and spices in a jar; mix well. Pour 1/3 cup of oil mixture over chicken and toss to coat. Chill for at least 2 hours. Add fruit, nuts to chicken mixture. Garnish with kiwi. Serve remaining dressing with salad.
