FRESH APPLE COFFEE CAKE 
3 eggs
1 3/4 c. sugar
1 c. oil
2 c. flour
8 apples, cut in thick slices
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
3/4 c. chopped walnuts

Mix eggs, sugar and oil with fork. Add remaining ingredients and mix with a wooden spoon. Pour into greased and floured 9 x 13 inch pan. Bake 1 hour in 350 degree oven. When cool, sprinkle with powdered sugar or top with whipped cream. NOTE: The apples are mixed in the batter.
