SCALLOPED POTATOES AND HAM 
2 c. ham, diced
8 med. potatoes, peeled and sliced
1/2 c. diced celery
1/4 c. diced green pepper
1/4 c. diced onion
1 tbsp. flour
1/2 c. butter
2 c. milk
1/2 tsp. salt
1/8 tsp. black pepper

Preheat oven to 375 degrees. Layer potatoes, ham and vegetables in a lightly greased 9 inch square baking dish. Sprinkle with flour, salt and pepper. Pour in milk. Dot with butter. Bake for 30-45 minutes or until potatoes are done. Garnish with fresh parsley
