TOMATO PUDDING 
2 1/2 c. tomato puree
1 1/2 c. light brown sugar
8 slices bread (not too fresh) crust cut off & cubed
1 1/2 sticks butter, melted

Place cubed bread in buttered casserole. Pour melted butter over bread. Boil together tomato puree and sugar for 5 minutes and pour over bread. Bake in 350 degree oven approximately 1 hour or until knife comes out clean.
