EGG AND POTATO PIE 
4 lg. potatoes, par-boiled
1 lg. onion, sliced
4 oz. butter, melted
4 oz. ham, chopped
2 tbsp. parsley, freshly chopped
6 slices bacon, cooked and chopped
1 c. Swiss cheese, grated
2 c. heavy cream
12 eggs, beaten

Slice potatoes into 1/8 inch slices. Saute potatoes and onion in butter until slightly browned. Butter a 10-inch pie pan and lay potatoes and onions in the pan, covering the bottom of the pan. A shallow casserole dish might be more suitable for this dish.

Mix remaining ingredients and pour over potatoes. Bake in an oven at 300 degrees for 40 minutes or until eggs are set. Serve with a fruit garnish or tossed salad. Serves: 6-8. (Prep and Cooking Time: 1 hour 15 minutes)
