8 oz. pkg. softened cream cheese
4 c. hot mashed potatoes
1 beaten egg
1/3 c. finely chopped onion
1/4 c. chopped pimiento
1 tsp. salt
Dash of pepper

Combine all of the ingredients except the pimiento and mix well. Fold in the pimiento. Put 1-quart casserole and bake at 350 degrees for 45 minutes. Serves 6-8.
