APRICOT CHEESE DELIGHT 
1 can apricots, drained & finely cut
2 c. hot water
3/4 c. miniature marshmallows
1 can crushed pineapple, drained
2 pkgs. orange Jell-O
1 c. combined apricot & pineapple juice

Drain and chill fruits, reserve juice. Dissolve Jell-O in hot water. Add 1 cup combined juice (reserve remaining juice for topping). Chill Jell-O until slightly congealed. Fold in fruit and marshmallows. Pour into a cold baking dish; chill until firm.

TOPPING:

1/2 c. sugar
1 egg, slightly beaten
2 tbsp. butter
1 c. whipping cream, whipped
3 tbsp. flour or cornstarch
1 c. combined apricot & pineapple juice
3/4 c. Cheddar cheese, grated

Combine sugar and flour, then blend in egg (beaten). Gradually stir in juice cooked over low heat. Stir in butter; cool. Fold in whipping cream and spread over chilled Jell-O. Sprinkle cheese over top; chill.
