FLORENTINE - BEEF PINWHEEL | |
1 1/2 lbs. ground beef 3/4 c. soft bread crumbs 1 egg 1 1/4 tsp. salt, divided 1/8 tsp. pepper 10 oz. pkg. frozen chopped spinach, defrosted & drained thoroughly 1/2 c. Mozzarella cheese, shredded 3 tbsp. Parmesan cheese 1 tsp. Italian seasoning 1/8 tsp. garlic powder 3 tbsp. catsup Lightly, but thoroughly combine meat, crumbs, egg, 1 teaspoon salt and pepper. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, Italian seasoning, remaining salt and garlic powder. Place beef mixture on wax paper and pat into a 14 x 10 inch rectangle. Spread spinach mixture over beef to 3/4 inches from edge on the sides. Roll up from short end (jelly roll style) to enclose spinach filling. Press beef mixture over ends to seal. (Remove wax paper.) Place loaf, seams down, on rack in roasting pan. Bake in 350 degree oven for 1 hour. Spread catsup over loaf and continue baking 15 minutes longer. Slices beautifully. |
