MULTI-GRAIN MUFFINS | |
3/4 c. all purpose flour 1/2 c. yellow cornmeal 1/2 c. oats 3 tbsp. wheat germ or oat bran 3 tbsp. packed brown sugar 1 tbsp. baking powder 1/2 tsp. salt (optional) 1 c. skim milk 1/4 c. salad oil 1 egg or 2 egg whites Preheat oven to 375 degrees. Spray muffin tins with Pam spray. In large bowl, beat milk, oil, and egg until blended. Stir into flour mixture just until moistened (will be lumpy). Bake for 20-25 minutes. Cool 5 minutes before removing from pan. |
