APPLE WALNUT MUFFINS 
2 1/2 c. finely chopped apples
1 c. sugar
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. allspice
1 tsp. cinnamon
1 egg, beaten
1/2 c. vegetable oil
1 c. chopped walnuts
1/2 tsp. black walnut flavoring (optional)

Place paper baking cups in muffin pans. Preheat oven to 350 degrees. In small bowl, mix together apples and sugar. In a large bowl, sift together flour, baking soda, salt, allspice, and cinnamon. Add egg and oil to the dry ingredients. Stir in apple/sugar mixture. Finally, add walnuts and flavoring if you are using it; mix well. Fill baking cups 2/3 full and bake 35 minutes. Serve warm with butter and honey. Makes 2 dozen.
