J.O.'S SWEET POTATO PECAN PIE 
2 c. mashed sweet potatoes
1/2 c. brown sugar
1/2 c. granulated sugar
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. vanilla flavoring
4 eggs, lightly beaten
1 1/2 c. pecan halves
1 unbaked pie shell

Preheat oven to 375°F. Mix potatoes, sugars, spices, salt and flavoring. Add eggs. Combine thoroughly. Stir in pecans and pour into pie shell.

Bake 45 minutes. Then reduce heat to 325°F and bake additional 10 minutes. Cool and serve.
