SWEET POTATO PECAN PIE 
Part 1:

3 sweet potatoes, baked, or about 3 c.
1/2 c. brown sugar
1/4 c. sugar
1 egg
2 tbsp. butter
2 tsp. vanilla
1/4 tsp. salt
1/4 tsp. allspice
1/8 tsp. nutmeg
1/4 tsp. cinnamon
1 1/2 c. pecan pieces

Part 2:

1 1/3 c. sugar
1 1/3 c. corn syrup
4 eggs
3 tbsp. butter, melted
1 tbsp. vanilla

Beat sweet potatoes until smooth. Add remaining ingredients of Part 1 and mix until well blended. Divide evenly into 2 pie shells and sprinkle each with 1/2 the pecan pieces.

Measure all ingredients of Part 2 into bowl of electric mixer and beat about 1 minute at moderate speed. Divide and pour over pecans in each pie.

Bake in preheated 325°F oven approximately 1 hour or until stainless steel knife inserted in center comes out clean.

This is one pie I can never "just eat one bite" of.
