SWEET POTATO - PECAN PIE 
1 c. cooked sweet potatoes, mashed
1/2 c. brown sugar
1/2 tsp. salt
1 (3 1/4 oz.) pkg. vanilla pudding mix (NOT INSTANT)
1 egg, slightly beaten
1/2 c. dark corn syrup
1 c. evaporated milk
1 c. pecans, chopped
2 tbsp. butter, melted

Mix first four ingredients. Add eggs, syrup and milk and blend. Stir in pecans and butter. Pour into unbaked 9 inch pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake until filling is set, (about 20 minutes). Can be frozen after baking. Cool before freezing.
