FRITTATA 
3 slices salami, 1/4 inch thick
1/2 onion, sliced
1/4 c. chopped bell pepper
1/4 c. chopped mushrooms
1/4 c. chopped celery
1/2 lb. spinach
Tomatoes, if desired
1/4 to 1/2 c. grated Parmesan cheese
1/4 to 1/2 lb. sliced Swiss cheese
3 tbsp. butter
1 tbsp. olive oil
1 lg. clove minced garlic
6 eggs
2 tbsp. whipping cream
1 tsp. dry basil
1/2 c. celery leaves

Blanch spinach in salted water and drain. Chop salami. Add to greased casserole along with sauteed onion, garlic, all other vegetables and lemon juice. Pour eggs and cream which have been beaten together on top.

Top with sliced Swiss cheese, minced parsley and Parmesan cheese. Bake about 20 minutes in 350 degree oven or until eggs are set. Cut in any shape you like. Serves 4 for lunch or as appetizers.
