FRITTATA 
6 tbsp. butter
2 pkg. frozen chopped spinach
1 c. chopped onion
6 lg. zucchini, sliced

Beat:

6 eggs
1 1/4 c. milk
3/4 tsp. salt
1/2 c. Parmesan

Combine all and pour into buttered 8 x 8 inch square pan. Bake at 350 degrees for 30 to 45 minutes. Serve hot or cold, cut into squares.
