SUGARLOAF COFFEE CAKE | |
2 1/2 c. flour 1 1/4 c. sugar 3 1/2 tsp. baking powder 1 tsp. salt 1 tsp. each cinnamon and nutmeg 1/2 tsp. each cloves and allspice 3/4 c. shortening (I use butter it gives more taste) 1 c. raisins, optional 1 good cooking fruit or 1 c. nuts 1 c. milk 1 egg, beater Heat oven to 375 degrees. Grease a square pan (a good brownie pan will do). Measure flour (sifted flour works best). Mix all dry ingredients well in bowl. Cut in shortening or butter, crumbling as you go with your hands until mixture looks like meal. Set aside one cup of dry mixture and to the rest add remainder of ingredients. Stir until moistened. Pour into pan, and sprinkle reserved mixture over top. Bake 40 to 45 minutes. Serve warm and enjoy! |
