JALAPENO CORNBREAD 
3 c. cornbread mix
2 1/2 c. milk
1/2 c. salad oil
3 eggs, beaten
1 lg. onion, grated
2 tbsp. sugar
1 c. cream-style corn
1/2 c. chopped jalapeno chili (fresh or canned)
1 1/2 c. yellow cheese, grated
1/4 lb. bacon, fried and crumbled

Mix all ingredients together and bake in three greased 8x8 inch pans at 400 degrees until done and brown, about 35 minutes. This is a generous amount, but it is good hot or cold, and freezes well.
